
A vanilla cupcake. How boring!

Baking these is as easy as cooking up cake mix with a box of food coloring in hand and some cupcake tins.

First you’ll need to use a box of white cake mix (not yellow) and I chose French Vanilla flavor which works just as well. Duncan Hines is also moister and richer than Betty Crocker as far as I know.

After you’ve made the batter, separate it equally into six bowls…

I followed the suggestion on the food coloring box for 1/6 of the mix (8 drops per bowl), but as my colors came out pastelly I’d recommend using at least twice the concentration of dye if you’re looking for vibrant hues.


Next comes the fun part! Layering the colors.

Just be careful not to mix the colors in the tins! I used approx. 1 spoonful per color per cup for rainbow layering. You could also do swirls, attempt checkers, dots, etc.

Beware that it’s a messy process!
Follow the baking directions (~20 min at 375) and they come out very cool looking.

You may likely find a U-shaped or M-shaped patterning when you slice your layered cupcakes, and this is due to the baking process where the warmer batter on the bottom of the tin moves up the sides, and the cooler core of the cupcake sinks.

They go great with my favorite rainbow chip frosting, and they are DELICIOUS! =)
